Breakfast of Champs (Savoury Edition!)



I’ve said it before and I’ll say it again, I’m not for complicated and time-consuming recipes. I’m all for quick and delicious cooking inspiration, and this one was a BANGERRRR. And a really easy one for all of my lazy shorties out there.


Ingredients:

🥚 Piece of toast (whatever kind of additive free bread that floats your boat)

🥚 2 Eggs

🥚 Approx quarter white/red onion, chopped (I use frozen pre-chopped onion because I'm lazy)

🥚 25g-50g Smoked Salmon (go for wild if you can!)

🥚 Cherry tomato

🥚 Green beans

🥚 Sprinkle smoked paprika and more sea salt & pepper 🤤🤤

🥚 Olive Oil (Extra Virgin where possible)

🥚Salt & Pepper to taste

🥚 Chilli Flakes to taste

Directions:

Add 2 teaspoons of Extra Virgin oil oil to a large pan and heat on medium heat.


Once oil is hot, add your chopped onions to the pan and fry until they start to become translucent. I eyeballed the amount of chopped onion I used but I would say I used about a quarter of an onion.


Then add approx 5 cherry tomatoes (or as many as you want) and the green beans to the pan along with a tea spoon of paprika and stir fry.


Once they are 3/4 of the way cooked, add the eggs and fry (to taste).


While the eggs and veg are frying, put the toast in the toaster (optional) and get the smoked salmon at the pack and put on the plate.


Put the toasted bread on the plate and use a spatula to transfer the eggs from the pan to the plate (on top of the bread).


Then add the beans and cherry tomatoes to the plate (I added the veg to the side mostly).


Top of with a pinch of salt, pepper and some more paprika if you want.


Lastly - EAT AND ENJOY!!
