Classic Avocado Toast with Feta



This amazing Avo Toast takes 5 minutes to put together and is a classic dish for when you have no idea what to make.


Ingredients:

Two slices Sourdough Bread (toasted, optional)

Half Avocado

15g Feta Cheese (I use organic)

Chilli Coconut Aminos to drizzle (optional)

Pinch of Sea Salt

Chilli Flakes (optional)



Directions:

Toast your two slices of sourdough bread. I went for spelt bread but you could use wheat or any other option you prefer.


While the bread in the toaster, cut an avocado in half and cut one the halves into cubes.


Scoop out the cubed avocado with a spoon and put on the two slices of toast.


You can then mash the avocado with a fork slightly to your preferred consistency. I personally like at least some cubes to remain.


Then, weigh out approx 15g of feta cheese. I use a scale for this but if you don't have a scale, then you can just eye ball a moderate amount of feta cheese for the two slices of toast. Crumble the feta in your hands onto the avo toast.


Finally, sprinkle a pinch of sea salt and chilli flakes on the toast and drizzle the Coconut Aminos (if you have some).


And... that's it!


If you want to up the protein a little, try adding some chopped up chicken to the toast or some tempeh if you're vegan!
